Isoglucose

Glucose-fructose syrup (HFCS - High Fructose Corn Syrup) is a liquid sweetener used in the production of foods and beverages. It is composed of several sugars, mainly glucose and fructose, with a fructose content which varies from 5 to 50%. In Europe, Glucose-Fructose syrups and Fructose-Glucose syrups with a fructose content higher than 10% are classified as Isoglucose.
If the content of fructose exceeds 50%, the product is defined Fructose-Glucose Syrup. For the high content of glucose and fructose, the sweetness of this product can be compared to that of a sugar solution.
The Glucose-Fructose syrups can be used in confectionery, beverages, marmalades and fruit preserves, in bakery products, products based on cereals, yoghurts and other milk-based products, dressings and canned products. It is not only used for its sweetening properties but also for other properties, for example as a structuring and as a preservative. It is also particularly suitable and widely used in soft drinks.
